Grapes: 33,33% Dolcetto di Diano, 33,33% 

Barbera Alba Maestrale, 33,33% Langhe Merlot

Vinification: The 3 grapes are vinified separately in steel tanks at a controlled temperature. Dolcetto is then aged in steel tanks for about 12 months. Barbera is aged in barriques for 14 months , 50% of the barriques are new. Merlot is aged for 18-20 months in 1000-liter oak-casks. The wine is then assembled and fined for 2-3 months in steel tanks and finally bottled.

Vermouth di Torino

Vermouth is a fortified spiced wine usually

made with aromatic grape- varieties. All herbs

in this Vermouth must come from Langhe hills

for tradition and unique flavours.

Process begins with an infusion of flowers and 

herbs like chamomile, coriander, gentian and 

dandelion, absinth and bay-leaf and spices like 

nutmeg, cloves and china roots until the armony

is reached; once the infusion is ready, they then

add it to the wines selected and pure brown sugar

and fine in wood until ready.

Barolo Chinato

Barolo Chinato is a fortified wine which is produced

by adding to Barolo wine, the extracts obtained from the infusion in alcohol of herbs and cinchona.

 

It is left for about six months in small barrels, here the spices and aromas mix together with the aromas of the wine, and the bitterness of the cinchona blends with sugar and alcohol.
