Vinification: Fermentation in wooden casks and in concrete. Ageing for 12 months while undergoing battonage.

Grapes: Corvina Veronese, Corvinone & Rondinella

Vinification: 70% in French oak barriques of 20 hl for 20 months and 30% in barrique of French oak of 3 passage then 24 months aging in bottle.

Valpolicella Superiore

Grapes: Corvina Veronese, Corvinone, Rondinella & small percentages of Croatina and Oseleta. 

Vinification: Ageing in French oak barriques of 225 litre and in oak casks of 20 hl for 20 months and then 24 months aging in bottle.

Vinification: Spontaneus cold maceration for 6-7 days allowed by the very low outside temperature.

Ageing in French oak barriques of 225 litre for 18 months & 24 months aging in bottle
